Chicken and Spinach Summer Casserole recipe
Ingredients:
1 tablespoon olive oil2 garlic cloves, crushed
2 cups fresh spinach, finely chopped
2 cups shredded cooked, skinless chicken breast
1/2 cup sour cream
1/2 cup mayonnaise
1 tablespoon fresh lemon juice
½ teaspoon black pepper
¼ teaspoon salt
½ cup Parmesan cheese
½ cup grated mozzarella cheese
Preparation Instructions:
1. Preheat oven to 350ºF.2. Lightly grease a 9-by-9-inch baking dish and set aside.
3. In a large skillet, heat olive oil over medium. Add garlic and cook 30 seconds, until fragrant. Add spinach and cook until wilted and bright green, stirring, 2 to 3 minutes. Transfer to a large bowl, add chicken, and toss well.
4. In a separate large bowl, combine sour cream, mayonnaise, lemon juice, pepper, salt, and cheeses. Transfer half of cheese mixture to chicken mixture; toss well to coat, and spread into prepared dish. Spoon remaining cheese mixture over the top.
5. Bake 45 minutes, until bubbling and lightly browned. Cool 15 minutes before serving.
